WHO IS UNCLE BUCK?
Born: 6-7-55 Where: Waukegan, IL (outside Chicago) Raised: San Diego, CA
Married to Janis for 32 years; we have a daughter Melissa who is 28 and one son Daniel, 20. Melissa teaches high school at Sanger High. Daniel goes to City and works for Apple Computers. We have one awesome grandson, Patrick who is a year and a half. Melissa and her husband Shawn have been married for four years. Shawn is a manager for Yosemite Water.
I have been in radio broadcasting as on- air talent and in the programming department for 34 years. We have lived all over the country. I have worked in Fresno now three times. Stops along the way include San Diego, St. Louis, Pittsburgh, Denver, Kansas City, San Francisco, Phoenix, Monterey- Salinas, Dallas, Reno, Baton Rouge, Allentown, Wichita and a few in-between.
I started in country radio in 1997 and it has become my favorite music. I have been blessed to be involved in helping launch the careers of Rascal Flatts, Keith Urban, Brad Paisley and more. It was great watching these artists and more grow from their first time in the radio station playing acoustically to now selling out arenas and stadiums.
Outside of BIG COUNTRY 1027, we love going to the coast, taking the three Pomeranians, Montana, Sabrina and Savannah to the dog park and playing with our Amazon Crowned-Lilac parrot, Buddy and his running mate, Jerry the Cockatiel. I am an avid model railroader and have an operating N scale model railroad layout. I am involved with several railroad fan organizations. I love hanging out from 2p-7p everyday on 1027, getting emails and phone calls, surfing the BIG NET right along with you. Thanks for listening and surfing! | | | 2 pounds lard 2 1/2 pounds pork butt, trimmed and cut into 2-inch cubes 1/2 teaspoon freshly ground black pepper 1 cup Chile de Arbol Salsa, recipe follows 2 teaspoons salt
In a large saucepan melt lard over moderate heat. Add pork, salt and pepper and simmer until tender. Cook about an hour, being careful not to crisp the meat. Remove pork and set aside until cool. Shred the meat by hand or with tines of a fork. Remove and discard any remaining fat. Transfer to a medium saucepan, add the Arbol salsa and cook over moderate heat, stirring frequently. Serve or assemble within a toasted corn tortilla to make taco. Carnitas can stay refrigerated for up to five days before assembling within a taco.
CHILE DE ARBOL SALSA (RED SALSA) 1/2 pound Italian Roma tomatoes 3/4 pound tomatillos, husked and washed 1 cup (30 - 40) Arbol chiles 1/2 bunch cilantro, leaves only, roughly chopped 1 medium white onion, chopped 2 cups water 4 garlic cloves, crushed 1 teaspoon salt 1/2 teaspoon freshly ground black pepper
Preheat broiler. Place tomatoes and tomatillos on a baking sheet. Broil, turning occasionally until charred all over, 10 to 12 minutes. Transfer to a saucepan. Add the remaining ingredients. Bring to a boil and cook until onions are soft, 12 to 15 minutes. Transfer to a food processor or blender. Puree and then strain. Serve at room temperature or slightly chilled. Arbol salsa can be stored in the refrigerator 3 to 5 days, or frozen for weeks.

Project HIGH POINT

last night on ABC-TV (Channel 30) there was as 20/20 special on a program called PROJECT HIGH POINT. It is in 8 U.S. cities and will be expanded to 19 in the next year. The police, courts, and neighboorhood leaders all get together and go into drug laden neighboorhoods, approach the drug dealers to sign a document that they will attend a neighboorhood meeting and stop dealing drugs. If they do, they don't go to jail.
What a great program to look at in Fresno. The drug crimes dropped 75% in Hempstead, NY where they showed the process last night.
Way to go communities!
\ABC program looks at anti-drug program created in High Point Wednesday, August 20 ( updated 6:58 pm) HIGH POINT - ABC News "Primetime" will feature a report tonight about the success of a drug intervention program, which originated with the High Point Police Department and has since been used to curb the open air drug market and violence in Hempstead, N.Y.
The report profiles the Overt Drug Market Intervention Strategy, or High Point Initiative. The program was started with the High Point Police Department in 2004 and continues to produce results, High Point Lt. Steve Myers said.
Through the program, Myers said, the High Point police target different areas of the city by identifying drug dealers and violent offenders.
"There are some really bad guys that we take off the street right away," Myers said. "We tell the others they can end up like this guy (in jail) or straighten up."
Myers said the Overt Drug Market Intervention Strategy is a promise to vigorously prosecute repeat, violent and/or group offenders who continue to engage in violent activity. It also is an offer by the community to assist those who want to change their lifestyles by delivering the tools to do so.
Officers work with the Guilford County District Attorney's Office, federal officials and concerned citizens.
"The old-fashioned method of going out on the street and arresting as many people as you can - that only works if you have a large number of jails," Myers said. "It never stops the drug activity and violence."
The Overt Drug Market Intervention Strategy has been used to reduce drug activity and violence in High Point's West End and South Side neighborhoods and is underway in the East Green Drive area.
Since May 2004, the West End area has seen a 54 percent reduction overall in violent crime and a 25 percent reduction in drug-related crime as a result of the program, said Maj. Marty Sumner. In addition to Hempstead, ABC reported that eight other cities have implemented the program and 10 others have received federal grants to do so.

Fish Tacos | | | | Quick white fish tacos served in corn tortillas. Cod is tossed with vegetable oil, lemon juice, taco seasoning and sauteed until cooked through. Taco sauce made from mayonnaise, sour cream, taco seasoning and cilantro pours over white fish. Tacos are garnished with cabbage, tomato and a squeeze of lime. | | | Ingredients - | | | 1/2 cup Non-Fat Mayonnaise 1/2 cup Non-Fat Sour Cream 1/4 cup chopped Fresh Cilantro 1 (1.25 ounce) package Taco Seasoning Mix, divided 1 tablespoon Vegetable Oil 2 tablespoons Lemon Juice 1 pound Cod or other White Fish Fillets, cut into 1-inch pieces 12 Taco Shells or 12 warmed Taco Size Corn Tortillas Toppings: shredded Cabbage chopped Tomato Lime wedges Taco Sauce | | | | Preparation: | | | 1. In a small bowl, mix mayonnaise, sour cream, cilantro and 2 tablespoons taco seasoning mix. 2. In a medium bowl, add remaining taco mix, vegetable oil, lemon juice and cod 3.
